Post Work Dinner: Chicory and Little Gem Salad

Afternoon everyone and I hope you're having a nice summery day the same as we are here in Windsor today!

Today's post is a slightly brief one. I took some pictures recently of a lovely salad that I made to accompany some simple plain grilled tuna steaks and although the recipe is now available online and therefore easy to link to I still wanted to share this with you all as I think it's a nice light recipe for the current season that you may enjoy.

The recipe is from the same little Waitrose booklet that I got the Asparagus Pasta one from as featured in one of my previous posts here. I was having a week of trying booklet and recipe card recipes with seasonal ingredients and this one happened to pop onto the radar as well.

As I mentioned it's a very light and summery salad so I thought it was also worth sharing given it's simple nature. It would be great on its own or as we had it, as an accompaniment to fish or light meats - chicken or pork for example.

The recipe calls for Red Chicory which I wasn't able to get a hold of so used Red Cos Lettuce instead which seemed to work equally well. I also omitted the mint as we didn't have any available - ours had gone a little past its best - and the recipe still tasted great!

It really is a very quick and easy salad to try so if you're looking for something a little different to eat this week then why not give it a go. In this summer BBQ weather it would be a great side dish to go with your BBQ food if you're tempted over the coming week.
